Breakfast Oats Blueberry Muffin Recipe

This Breakfast Oats Blueberry Muffin Recipe is so healthy, since there is no refined sugar and refined flour.

Its my second post in making Breakfast made easy Series. Subscribe to Bitty Bakes to get the upcoming recipes in your mail. First recipe in this series was Healthy Granola that you can have with yogurt and fresh fruits.

Oats is a healthy option to make your mornings a fresh start. In this recipe, I used brown sugar to make it more healthy.

I used dried blueberries, you can replace it with any other fruits. This recipe is mildly sweetened to keep it very light. You can serve it with honey if you like it sweeter.

Ingredients:

  • Whole Wheat Flour – 60 g (1/2 c)
  • Oats Powder – 1/2 c
  • Baking Powder – 3/4 tsp
  • Baking Soda – 1/2 tsp
  • Salt – a pinch
  • Melted Butter – 60 g (1/3 c)
  • Brown Sugar – 100 g (1/3 + 1/3 c)
  • Egg – 1
  • Vanilla Extract – 1/2 tsp
  • Milk – 80 ml (1/3 c)
  • Dried Blueberry – 1/4 c

Method:

  1. Preheat oven to 200 C for 10 min. Prepare the muffin tray by lining it with paper cups. This recipe yields 6 muffins.
  2. In a bowl measure the wheat flour, oats, baking powder, baking soda and salt. Whisk it well.
  3. Place melted butter and sugar in another bowl and mix it using a whisk.
  4. Add in the egg and vanilla. Mix it till incorporated.
  5. Mix the flour and milk alternatively in two parts starting and ending with flour.
  6. Fold in the blueberries. Reserve some for the top.
  7. Pour it in the paper cups and top it with more blueberry and rolled oats.
  8. Bake for 15-18 min at 200 c.
  9. Serve it hot with fresh fruits.

I ate it for the next day of breakfast. Sliced in to half and slightly toasted with some butter. Then added in banana with a tbsp of honey. hmm!! It tasted heavenly and healthy too.

Additional Topping: Baked Oats Granola can be added to the top just before baking to make it more crispy top. Or just serve it with some granola.
