In Paleo diet, coconut milk is made fresh and had as daily breakfast either with chia seeds or any nut butters. Its low in carbohydrate, and high in fat. It can used to make smoothies and low carb shakes. Since its naturally sweet, the artificial sweetener is not necessary.
For thick coconut milk, just after grinding, leave it undisturbed or place it refrigerator for a while. Thick milk will settle as top layer, use it for shakes and discard the remaining water.
