Mango Chia Shake is loaded with nutrition. This has only three main ingredient- mango, chia and coconut milk. Mango, we Indians love it a lot. Here, mango season and school holidays are always together in summer. Kids enjoy in summer having mangoes daily.
Mango and coconut milk has lot of nutritional value. Both has quite a lot of vitamins with fiber. Coconut milk also contain iron, calcium, sodium and some other minerals too. Despite of its small size, Chia has omega-3 fatty acid that can be seen very rarely in our daily foods. It also has protein, fiber and calcium.
Who doesn’t love a drink that has tons of nutritional value? Kids will just love it.
Here is a trick to remove pulp out of mango. Slice in three halves, like seed in middle and other two sides only with pulp. Cut it through with a knife vertically and horizontally like so and run knife touched with the skin.
Homemade coconut milk or store bought one can be used. Don’t waste the coconut meat after strained. You can use it for making coconut flour
Mango Chia Shake is very healthy drink with thick coconut milk and mango. Omega-3 is very rarely available in Chia.
- 1 Ripen Mango
- 3/4 c Coconut milk
- 3-4 tbsp Chia Seed
- pinch Saffron optional
- 1 tsp Milk optional
Heat the milk with saffron for a min and reserve. Let the essence and color of saffron infuse in milk.
Extract thick coconut milk. I prefer home made coconut milk.
Mix chia seed and saffron milk with coconut milk and refrigerate for 2-3 hrs. So that the chia seed will soak.
Take the plup of mango and grind it, refrigerate it for 2-3 hrs.
Serve with alternate layers of mango and coconut milk.
