Saffron Donuts filled with Pastry Cream

Folks who love donuts, raise your hand! There is a separate community of dessert lovers who love Donuts. Agree? You are in for a treat as this blog is about Saffron Donuts filled with Pastry Cream. There is no age barrier to love donuts. My son loves donuts, I love donuts, my friends love donuts, my parents love donuts and by this I discovered that the whole universe is in love with donuts.

I am that kind of person who has immense sweet tooth and would not mind having bakes early in the morning for breakfast. There are days when I do not want to prepare anything for myself for breakfast and end up having lots of donuts. Especially donuts with pastry cream. What a way to start a day right? Just the simple ways of making the child in me happy!

Most of the times, we keep hearing this quote ‘Love yourself ‘ and ‘Make yourself a priority’. According to me, making yourself a priority and making yourself happy comes by the way of treating yourself once in a while. Get away by all the hustle of life and take time for yourself and settle down in a cozy sofa, grab a cup of coffee and most importantly have donuts. See, life just turned beautiful. This is how you bring the sunshine in your life even on gloomy days.

Notes:

  • You can store the pastry cream till 4-5 days in fridge.
  • You can allow it to raise overnight in fridge, and next day punch and cut in rounds. Allow it to raise till doubled, around 30-40 minutes.
  • Donuts can be cooked and stored with out filling in fridge for up to 5 days.
  • You can use any other filling like Nutella, Jam, Ganache and so on.

Recently I am too cautious on the donuts that we get outside. So, I eagerly tried this recipe of Saffron Donuts filled with Pastry Cream and it came out really well. Ossoro’s  Kesar Gulab essence added it’s beauty to donuts like always. I would recommend you to try Ossoro’s varieties of essence any day. Now, let me take you on a journey of how I made this recipe.

Saffron Donuts with Pastry Cream

Prep Time 10 minutes
Cook Time 2 minutes
Course Dessert, Snack
Servings 6

Ingredients
  

  • 260 g ( 2 cups) All purpose Flour /Maida
  • 1/4 tsp Salt
  • 2 pinch of Saffron
  • 1/2 tbsp Active Dry Yeast
  • 1/2 cup Milk
  • 2 tbsp Sugar
  • 1 Egg
  • 40 g Unsalted Butter
  • 1/2 tsp Ossoro's Kesar Gulab Essence
  • Oil for frying

To make Pastry Cream:

  • 1/2 cup Milk
  • 1 Egg Yolk
  • 1/4 cup Sugar
  • 2 tbsp All purpose Flour / Maida
  • pinch Salt
  • 2 drops Ossoro's Kesar Gulab Essence

For dusting:

  • 1 tsp Cinnamon Powder
  • 1/2 cup Castor Sugar

Instructions
 

  • Warm the Milk to dissolve yeast. Temperature of milk shouldn't be too high. Test it with your finger - dip your finger in milk and if you can bare the heat for 5 seconds you are good to go.
  • Add 1 tsp of Sugar and yeast to milk and give it a mix.
  • Wait for 5 min, let yeast dissolve and become frothy. (If its not frothy, discard and start with new yeast)
  • Once its frothy add in remaining sugar, melted butter, egg, saffron and whisk it.
  • Whisk in Ossoro's Kesar Gulab Essence.
  • Add in 1 1/2 cup Flour and salt.
  • Mix using a spatula.
  • If its too sticky add in the remaining flour slowly.
  • Once it forms a dough, transfer it on to work surface.
  • Knead for 5 minutes.
  • Place the dough in a bowl, apply oil on all sides.
  • Cover it with cling film and let it raise in a warm place for 1 1/2 hours. (You can preheat the oven to 100 C and switch it off, place the bowl in it to keep it warm.)
  • Once doubled, punch it back and roll to 1/2 " thick.
  • Cut the dough using a round cutter and place it on a tray.
  • Apply oil and make sure it doesn't dry.
  • Allow it to raise for another 20 minutes.
  • Deep fry the raised donuts.

To make Pastry Cream:

  • In a bowl, Whisk in yolk and sugar till smooth.
  • Add in the flour and salt. Whisk till smooth.
  • Luke warm the Milk. (if the milk is too warm, it will cook the egg)
  • Slowly pour in the milk while whisking in the yolk.
  • Put back on the heat and whisk consistently.
  • Flour will start to cook and will thicken.
  • When its thick enough and cooked well for 2 minutes, remove from heat.
  • Strain the cream to get rid of any lumps in there.
  • Whisk in Ossoro's Kesar Gulab Essence.
  • Transfer it to a glass jar and using a cling film cover it directly on top to avoid a layer forming.
  • Poke the donuts and fill with this pastry cream.
  • Dust it with cinnamon and sugar. Enjoy!
