This Soaked coffee cupcake with coffee buttercream is so mouth watering!!

As I said previously I am a crazy coffee lover!. My idea of cupcake is the one the that we see in the windows and are drooling for. I was always very much for eating the cupcake because you can eat what you are craving for but in a small quantity. But, when I read the fine print that said everything in it has coffee , I was dubious. Won’t it be like eating coffee more like that ad that comes for the kopiko chocolate. How will you get the taste of cake with so much coffee in it? But, not until I made it did I realise that, that was not the case.

I used Ossoro ‘s Colombian coffee essence. It is really nice and gives out just a mild smell and flavour. Soaked Coffee Cupcake Recipe

 This Coffee Cupcake with coffee Buttercream is just so mouthwatering!!

Ingredients
  

  • 230 g (1 + 3/4 cup) All Purpose Flour/Maida
  • 200 g (1 cup) Castor Sugar
  • 3/4 tsp B.Soda
  • 3/4 tsp B.Powder
  • Pinch Salt
  • 125 ml (1/2 cup) Oil
  • 2 Eggs
  • 125 ml (1/2 cup) Warm Black Coffee
  • 125 ml (1/2 cup) Buttermilk
  • 3/4 tsp Ossoro's Colombian Coffee Essence

For Coffee Syrup:

  • 1 tsp Ossoro's Colombian Coffee Extract
  • 4 tbsp Sugar
  • 1/2 cup Water

For Coffee Buttercream:

  • 100 g (1/2 cup) Unsalted Butter
  • 300 g (1 + 1/2 cup) Icing Sugar
  • 1 tsp Ossoro's Colombian Coffee Extract
  • 2 or more tbsp Water (as needed to pipe)

Instructions
 

  • Preheat oven to 200 C for 10 min. Line a cupcake tray with liners.
  • Measure Flour, baking powder, baking soda, salt. Give it a whisk.
  • In another bowl, add in oil and sugar, mix it till combined.
  • Add Egg one at a time and mix in.
  • Mix coffee and buttermilk separately.
  • Add in the Flour and coffee mix alternatively starting and ending from flour in 2 additions.
  • Pour it in the cupcake liners and bake for 15-20 minutes. This will make around 12 cupcakes.

To make Syrup:

  • Mix and boil all the ingredients till sugar dissolves. Let it come to room temperature.

To make Buttercream:

  • Beat butter till creamy.
  • Add in Coffee Essence.
  • Sift in the Icing sugar and beat till Mixed.
  • Once the cake is cooled, poke it in 4 places.
  • Add 1 tbsp coffee syrup to each.
  • Pipe the buttercream and decorate it.
  • Serve it right away.
