Balsamic Berry Popsicle
Scorching heat is way too hard to tolerate sometimes. So, whenever I have time, I’ve been doing research on various recipes. And, popsicles tops my list. Because they are not only yummy, they are pretty simple to prepare too. I thought of making good use of Berry season to make my popsicles and I would say it turned out better than I expected.
Before I tell you more about the recipe, I want to discuss why having berries is very important during summer. Shall we?
Summers make you hungry very easily but summer is also not a very good time to eat anything you want. So, whenever you feel like munching something, here’s why you should grab a handful of berries rather than anything else:
- Berries are loaded with antioxidants
- They are high in fiber
- Berries have lower cholesterol levels
- They are very good for your glowy skin.
- Can reduce the risk of obesity and fights against heart diseases.
Aren’t these enough reasons to add a lot of berries into your Popsicle? I have used all kinds of frozen berries for this Balsamic Berry Popsicle. So you can imagine how flavorful this recipe can turn out. I have used the minimal number of ingredients to create an amazing taste. Yes, you don’t need a lot of ingredients for a recipe to turn out good. Just the right ingredients with the right twist of flavor is all you need.

Balsamic Berry Popsicle
Ingredients
To make balsamic vinegar berries:
- 1 1/3 cup Frozen Berries (cranberry, blueberry, raspberry, blackberry. you may use anyone of the berry as well)
- 1/3 cup Sugar
- 1 cup Water
- 3-4 tbsp Balsamic Vinegar
To make popsicle:
- 4 leaves Rosemary
- 1 1/2 cup Water
- 1/4 cup Sugar (adjust according to taste)
Instructions
To make balsamic vinegar berries:
- In a sauce pan, add water and sugar.
- Let the sugar dissolve.
- Add in balsamic vinegar and let it come to a boil.
- Add the berries that you are using.
- Let it cook for sometime. You may mash it, if you want. I did mash it a little.
- Once its cooked and reduced to a sauce consistency, turn off the heat.
- You may store this if you wish to use it on panna cotta, mousse or on cake.
To make popsicle:
- Take 3/4 cup of the sauce.
- Add it to a blender, blend till smooth.
- Add all the popsicle ingredients in a sauce pan.
- Pour in the berry paste.
- Give it a mix and let it come to boil.
- Once it comes to a boil, strain it in a fine mesh.
- Pour it in popsicle mold.
- Freeze at least 4 hours or overnight.
- Enjoy this yummy popsicle!!
