My 2 year old son is always with me in my kitchen usually playing with kitchen utensils like every other child. He always opens the cupboard near the stove where I cook and take a utensil and spoon to play. I want to be careful all the time since he is always around. But sometimes I do get angry and shout at him. And naturally as a mother I feel for it later.
Most of the time it will be dosa or idly with a side dish as breakfast for my son. Morning, I have to prepare food for my son and pack lunch for my husband. So I prefer to keep my dishes simple that can made within minutes. Its easy for me to make batter that is low carb, for dosa/crepes. So that it goes well with my son’s side dish. Searching the alternatives for normal carboholic dosa has lead me to this coconut crepes.

Making the crepe batter and pouring it on a hot pan with a drizzle of coconut oil is all it needs. So whisking up the egg and coconut for batter is as simple as it sounds. I made a protein packed side dish Paneer spinach masala to go well with this crepe.
For one or two spoons of coconut flour, its not necessary to buy a large amount of flour, you can even make it in home like me.

Coconut Crepes
Ingredients
- 3 tbsp Coconut flour
- 1 Egg
- 1/4 tsp salt
- 1 tsp Coconut oil or Butter
Instructions
- Whisk the egg with a fork.
- Add in the coconut flour and salt.
- Let it sit for 2 min, now it will look like dosa batter.
- Pour it on a hot pan and cook on both sides with a drizzle of coconut oil or butter.
- Serve with Paneer spinach masala or with any nut butters and fruits.
