Coconut Flour is so healthy, gluten free and diabetic friendly flour with good nutritional value. It can used to make pancakes, bread, cookies, muffin, cakes and almost everything.
Coconut flour is very easy to make at home instead of buying it expensive in the market. Make it ahead and store in air tight container and freeze it. It can be kept for 1 month.
Coconut flour absorbs lot of moisture, so when using this flour the liquid of the total recipe needs to be increased.
Coconut Flour is a gluten free flour. Its diabetic friendly.
- 1 c Coconut sherds
- 1 c Water
- Grind coconut sherds with water in mixer and strain with a fine sieve. The white liquid is coconut milk. Use it for make shakes and desserts.
- Spread the strained meat in a baking tray. Using a fork break the lumps in fine bits.
- Leave in room temperature for a day if living in a sunny climate or place it in oven at low temperature for 5 min or until the flour is completely dry.
- Grind the dried flour in mixer till fine powder. Store it in air tight container and use it for gluten free recipes.
Don’t waste the coconut milk, it’s full of nutritional value. You can drink it as such or make it yummy like I did.
