Ingredients
125g (1/2 cup + 2 tbsp)Unsalted Butter
100g (1/3 + 1/3 cup)Brown Sugar
1Egg
1 1/2 tspVanilla Extract
2CupsMillet Flour
1/2cupWhole Wheat Flour
1/2tspSalt
3/4tspBaking Powder
2tbspCocoa powder
For Topping: (optional)
2tbspChopped Pistachio
2tbspDesiccated Coconut
2tbspChopped Cashews
Instructions
Measure Flours, salt, Baking powder and whisk it.
Using an electric beater, beat Butter till Creamy.
Add in the Brown Sugar and beat till smooth.
Add Egg and Essence, beat till incorporated.
Mix and beat in the dry mix.
Divide the dough into half and add cocoa powder to one and mix well.
Put it each in separate cling wrap and form cylinders.
Refrigerate for atleast 4 hours to get the dough firm enough to slice.
Preheat the oven to 200 C for 10 minutes. Prepare the baking tray with parchment paper.
Once firm, slice the cookies and dip sides in the nuts or coconut if using.
Place the cookies in the baking tray and bake until the sides are slightly golden brown.
