1/2kgFresh Cherriesstemmed and pitted
1/2cupSugar
1 + 1/4cupRed Wine
2tspCorn Flour

2tspRed Chilli flakesoptional
Instructions
In a heavy bottom sauce pan, place the cherries and sugar.
In a small bowl, mix 1 tbsp Red wine with the corn flour until no lumps.
Add rest of the wine to the saucepan.
Bring it to boil and let it simmer until the cherries are soft.
Just before removing from heat add in the corn mix and stir well.
So that the syrup thickens a bit. Boil it for a minute and remove from heat.
I made 2 flavors out of it - Vanilla and Chilli.
For just Vanilla Flavor - Stir in the Vanilla Extract and let it cool.
For Chilli Flavor - Add in the Chilli Flakes and simmer it for 2 more minutes.
Once they come to room temperature, store it in clean glass jars.
